I'm thinking rubbed with olive oil, salt & pepper of course and possibly some thyme & or rosemary. Spinach layered underneath (they don't take direct exposure to heat well)

Are those capsicums sweet or hot? & are them spuds & carrots blanched before baking? I often blanched my spuds before sauteing or baking them when with other vegs needing less cooking time.

Blanched is the best way Bella smile and every dinner need some kind off salt a pepper for taist .....even the best chips in the fish n chip shop are blanched before cooking
